Granola

(adapted from Renee Jones' recipe)
18 cups oats (quick or rolled)
2 cups brown sugar
1 cup oil
1 cup water
1 tsp. vanilla
1 tsp. salt
1 lb raisins or craisins (optional)

Mix oats and brown sugar in a large bowl. In another container, combine oil, water, vanilla & salt. Pour over oats. Bake at 250 for 2 1/2 hours. Rotate pans half way through. Stir in raisins at the end.
